So who loves a good pancake?? At Kiki Blah-Blah HQ we love a good pancake.
Seeing as it’s coming to that time of year. Why not try these mini pancakes, easy to make, light as a feather & they taste divine. These babies are gluten, dairy & refined sugar free.

Mini Banana Pancake Stack
- A handful of blueberries
- 3 chopped strawberries
- 1 ½ Medium sized bananas
- 2 eggs
- 100ml of water
- 1 tsp of Virgin coconut oil
- 1 vanilla pod (optional)
- Chia seeds to garnish
- Pop your blueberries and chopped strawberries into a saucepan with 100ml of water and put on a medium heat. When it starts to bubble and go like a jam turn the heat off and set it aside.
- In a frying pan add the coconut oil put the pan on a low heat, mash together your banana, eggs and vanilla seeds if you choose to add these. I did and it was incredibly tasty.
- When the oil has melted, just pop your pancake mixture in (spread the mixture into small circles) and cook on both sides till they are golden brown. Once they are all cooked stack them onto a plate smother them with jam, sprinkle some chia seeds on top and enjoy.
