LAMB STRIPS WITH SALAD #EatRaw2Score

Follow my new healthy eating plan, mainly raw fruit, veg and salad. 80% Raw natural foods either in their natural state or juiced. Accompanied by a small portion of whatever I’ve cooked for the family at lunch and dinner time.

Ingredients:
100g Chopped Lamb
1/2 a lemon
Tsp Coconut oil
1/2 an Onion *chopped*
Pinch of crushed Coriander seeds
Pinch of Ground Cumin
Pinch of Smoked Paprika
Pinch of powdered Mustard
Sprinkle of All purpose seasoning
Dash of Dark Soy Sauce
2 frozen cubes of Spinach
Handful of frozen sweetcorn
1 Large tomato *chopped*
Handful of chopped Kale
Handful of chopped Lettuce
1/4 Cucumber
2 tsp Chopped Beetroot

Prep your meat! For those who don’t know, this means rinsing the meat with water and lemon. Place in a bowl and add your seasoning- crushed coriander seeds, ground cumin, smoked paprika, powdered mustard, all purpose seasoning and a dash of dark soy sauce. Leave this to marinade for about an hour, although, for flavours to truly soak in, leave overnight, covered in a refrigerator. Time to cook! Add a teaspoon of coconut oil to your pan, add chopped onion and heat till brown. Throw in your pre-seasoned lamb and gently toss and mix in with the onions until the meat has browned and smells amazing. Add your spinach, sweetcorn and water and let everything simmer for 40 minutes. Wash, Chop and prep your salad! Exactly what I said above, get your salad ready whilst your Lamb is cooking. Serve, eat and enjoy without the guilt x

 

*Note- Serving suggestion for the kids… cut down on the amount of salad and add rice.
