Tomatillo Cheats Bruschetta

Tomatillo Cheats Bruschetta

Tomatillo Cheats Bruschetta… Tomatillos? What now? Not your every day kinda food but tomatillos are in season right now and they are awesome!

They look like green tomatoes but unlike tomatoes, they are covered in an inedible, papery husk. Mostly used in Mexican and Central American cuisine, they can be used raw or cooked in a number of ways; most famous of all perhaps is in the making of Mexican salsa verde (or green sauce).

I love a Salsa Verde Picante (chilli me up!) but more often than not use them to make a quick, easy lunch by way of this cheats bruschetta…

What you’ll need:

4 tomatillos – husks removed

Handful coriander
Juice of half a lime

Phwoar that looks so good – in bit a fan of spice and hot food (yeah I’m one of those) but that looks so good – the creme fraiche looks like it would calm the spice too – so how much do you charge for delivery? 😋😋😋😋
