Tomatillo Cheats Bruschetta… Tomatillos? What now? Not your every day kinda food but tomatillos are in season right now and they are awesome!
They look like green tomatoes but unlike tomatoes, they are covered in an inedible, papery husk. Mostly used in Mexican and Central American cuisine, they can be used raw or cooked in a number of ways; most famous of all perhaps is in the making of Mexican salsa verde (or green sauce).
I love a Salsa Verde Picante (chilli me up!) but more often than not use them to make a quick, easy lunch by way of this cheats bruschetta…
Tomatillo Cheats Bruschetta
What you’ll need:
4 tomatillos – husks removed
1 spring onion
1 red chilli
Juice of half a lime
4 tbsp Crème fraîche/natural yoghurt
Bread of your choosing
Pinch of garlic powder
Salt and freshly ground black pepper
Mixed salad leaves (optional)
What you’ll need to do:
Roughly dice the tomatillos and tomatoes and put them in a bowl.
Season with salt.
Deseed the chilli and slice.
Slice the spring onion.
Roughly chop the coriander.
Add the spring onion and coriander to the tomatillos/tomatoes and mix well.
Squeeze in the lime juice and add the garlic powder and Crème Fraîche.
Mix well. Scatter the chilli over the top and season well.
Serve with toasted bread and a side salad.
